Ingredients

  • 1 pound large shrimp (21-25 count), peeled and deveined
  • 1/2 cup panko breadcrumbs
  • 1/3 cup freshly grated Parmesan cheese
  • 3 cloves garlic, finely minced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
Garnish
  • Fresh parsley, chopped
  • Lemon wedges
  • Extra grated Parmesan

Equipment

  • Air fryer (4-quart or larger)
  • Large mixing bowl
  • Paper towels
  • Tongs
  • Cutting board and knife

Method

  1. Pat shrimp completely dry with paper towels. This is the most important step for crispy results.
  2. In a large bowl, combine panko breadcrumbs, grated Parmesan, minced garlic, garlic powder, paprika, cayenne (if using), salt, and pepper.
  3. Drizzle olive oil and lemon juice over the shrimp and toss to coat evenly.
  4. Add the shrimp to the breadcrumb mixture and press the coating onto each shrimp.
  5. Preheat air fryer to 400°F (200°C) for 3 minutes.
  6. Arrange shrimp in a single layer in the air fryer basket — don't overcrowd. Work in batches if needed.
  7. Air fry for 4 minutes, flip carefully, then air fry for another 3-4 minutes until golden and crispy.
  8. Remove immediately, garnish with fresh parsley and extra Parmesan, and serve with lemon wedges.

Notes

The absolute key is drying the shrimp thoroughly — any moisture will steam instead of crisp. Don't skip the preheating step. Flip gently with tongs to keep the coating intact. Serve immediately for maximum crunch.
