- Pat shrimp completely dry with paper towels. This is the most important step for crispy results.
- In a large bowl, combine panko breadcrumbs, grated Parmesan, minced garlic, garlic powder, paprika, cayenne (if using), salt, and pepper.
- Drizzle olive oil and lemon juice over the shrimp and toss to coat evenly.
- Add the shrimp to the breadcrumb mixture and press the coating onto each shrimp.
- Preheat air fryer to 400°F (200°C) for 3 minutes.
- Arrange shrimp in a single layer in the air fryer basket — don't overcrowd. Work in batches if needed.
- Air fry for 4 minutes, flip carefully, then air fry for another 3-4 minutes until golden and crispy.
- Remove immediately, garnish with fresh parsley and extra Parmesan, and serve with lemon wedges.
Notes
The absolute key is drying the shrimp thoroughly — any moisture will steam instead of crisp. Don't skip the preheating step. Flip gently with tongs to keep the coating intact. Serve immediately for maximum crunch.
