Ingredients
  

  • 1 cup cottage cheese (full-fat for best texture)
  • 1 1/2 cups self-rising flour, plus extra for dusting
  • 1 large egg
  • 1/4 cup plain Greek yogurt
  • 1/2 teaspoon salt
Egg Wash
  • 1 egg beaten with 1 tablespoon water
Topping (choose one)
  • 2 tablespoons everything bagel seasoning

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Blend cottage cheese in a food processor or blender until completely smooth (about 30 seconds). This step is important — lumps create uneven texture.
  3. In a large bowl, combine blended cottage cheese, self-rising flour, egg, Greek yogurt, and salt. Stir until a shaggy dough forms.
  4. Turn dough out onto a lightly floured surface. Knead gently for 1 minute until smooth — don't overwork it.
  5. Divide the dough into 4 equal pieces. Roll each piece into a rope about 8 inches long and form into a circle, pressing the ends firmly together.
  6. Place bagels on the prepared baking sheet. Brush with egg wash and sprinkle generously with your chosen topping.
  7. Bake for 22-25 minutes until golden brown on top and firm to the touch.
  8. Let cool for 5 minutes on the baking sheet, then transfer to a wire rack. Slice and serve warm with your favorite toppings.

Notes

Blending the cottage cheese smooth is the most important step — it creates a uniform dough without any grainy lumps. Don't over-knead: 1 minute of gentle folding is enough. The dough will be slightly sticky, which is normal. Wet your hands lightly or use extra flour if needed when shaping.
