No-Bake Chocolate Peanut Butter Energy Bites

These energy bites are the snack I always have in my fridge. They taste like a peanut butter cup had a baby with an oatmeal cookie, but they’re actually packed with good stuff — oats, flaxseed, and honey. No baking, no cooking, just mix, roll, and chill.

I started making them for my kids’ lunchboxes, but honestly, I eat more of them than they do. They’re perfect for that 3 PM slump when you need something sweet and satisfying but don’t want to reach for a candy bar. The chocolate chips melt slightly when you mix them in, creating these little pockets of chocolatey goodness in every bite.

Ingredients
  

  • 1 cup old-fashioned rolled oats
  • 2/3 cup creamy peanut butter
  • 1/2 cup honey
  • 1/2 cup mini chocolate chips
  • 1/2 cup ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch salt

Method
 

  1. Combine all ingredients in a large bowl and mix until everything is evenly distributed.
  2. Cover the bowl and refrigerate for 30 minutes — this makes the mixture easier to roll.
  3. Using a tablespoon or small cookie scoop, portion out the mixture and roll into balls between your palms.
  4. Place the energy bites on a parchment-lined baking sheet or plate.
  5. Refrigerate for at least 1 hour until firm.
  6. Store in an airtight container in the fridge for up to 2 weeks.

Notes

If the mixture is too sticky to roll, wet your hands slightly or chill it for an additional 15 minutes. If it's too dry and crumbly, add a tablespoon more honey or peanut butter. You can swap peanut butter for almond butter or sunflower seed butter for a nut-free version. These also freeze well for up to 3 months.
